You mix um up, and add the 1/2 egg shell of water, and roll them out?
Nice. My wife made noodles many years ago at a restaurant.
I believe they had a noodle cutter too.
These are sliced? or scissored?

Noodles for turkey noodle soup. Only a single batch - 1 cup flour,
pinch salt one egg and 1/2egg shell water. Woodworking related french
rolling pin made from some left over 6/4 hard maple.

A knife works but can "pull" and wrinkle unless surgically sharpened.
I've started using a pizza wheel style cutter.
