Default Coating a Butcher Block...?

Howdy,

I'm finishing up a kitchen island type thing which has a butcherblock top made of Maple. What do I
put on it and how to protect it? I've to use Mineral Oil which is fine but do I just dump it on ans
spread it aroudn with a rag? And if so, how much and how often?

Or are there better things to use? It will be used in food preparation so it has to be clean, but
I've heard of some of the oils going rancid over time which obviously wouldn't be good.

ALso how often are you supposed to clean them and reapply the oil stuff?

Looking for any general info on the topic.
