If you are putting concrete in holes, get as much water out as possible
using a paper cup and sponge, then use a thicker mix of concrete.

If you are not using concrete, then get water out as above, and you should
really be able to pack the dirt in tight since it's wet.

My Opion only.

the concrete, said it would displace the water, then the water should
drain off (water table?) then go back and finish it with more "mud".

Strength of Materials prof commented "Don't ever pour concrete as it
will be too weak, mix it so you place it instead".

That's good advice, and I've done it many times. If
you're really concerned, put the concrete in in two
steps, the first one with a little less water mixed.
I ass-u-me you're making sure you get below the
recommended freeze line depth, right? If not, whatever
you do won't matter; it won't last anyway.

in dry

thanks to all. basically i found it was not 'taboo' to cement a post
with water present. i mixed it dry(er), poured it in (how else do you
get it to the bottom of a 3 foot post hole?) and the water rose then
seeped back out. i'll let all know if it was a boom or bust. again, i
appreciate all the suggestions.

If the water bothers you, place a heavy plastic trash bag into the hole
first, and then carefully fill that with your concrete mix.
